Meatless and other things

A week ago, Dan decided that he didn't want to eat meat for the rest of the month. I still eat meat, but it's no fun for Dan to just pick the meat out of whatever meaty thing I decide to make, so I've been trying to accomodate his meatless lifestyle. So far we've had homemade pizza with red onions, green peppers, and feta cheese; homemade foccacia bread w/ roasted zucchini, squash, peppers and onions; marinated corn and black beans on tortillas w/ cheese and sour cream; spaghetti w/ roasted broccoli in it; and grilled cheese. Saturday we got pizza from Papa John's because it was buy one get one free. We had the leftovers Sunday, too. I am pizza'd out. And I am obviously running out of ideas. If you have any vegetarian dishes that you love, please feel free to pass them along to me! And leave a link.

In other news, we went shopping at the outlet mall this past weekend because it was the sales-tax holiday. It was also sheer pandemonium. I'm glad we made it out alive.

And now for random pictures that were on our camera.

 Storytime with Daddy.
Caught in the act.
Coming to get me. This little lady is a momma's girl.

Some pictures from when we watched Carter and Wendy on Friday. Dan has this nail toy thing from his teenage years. I used to want one back in the day. Kids love it for some reason.

Total Kirk face.

A normal way to watch T.V.

This is a bad picture of the new TV console that Dan built. It's perfect! And can you guess what the kids were watching?
And yesterday we gave Sam an ice cream cone. He loved it. He has yet to master the "lick and turn" approach, but he's working on it.

He was also a little tired.

And here's Afton with her beautiful blues.

Basically the only time we eat meat is on Sundays. I hate touching it, smelling it (raw), etc. Plus it's expensive. We eat a lot of homemade pizza, breakfast burritos, quinoa, meatless taco soup, and big salads with avocado, feta, craisins, etc in it. That picture of Dan reading to Sam is cute. Afton's eyes are totally gorge. What are you doing for her birthday?

curious george . that was easy. try quesadillas or soups, stir fry, enchiladas. I've been thinking about jumping off the meat train again too.

oh and mushrooms make a good substitute in a lot of things, try mushroom stroganoff, or portabello burgers. You can find recipes online.

These lentils are amazing. You can add some diced potato to the mix if you want to, too (http://www.nytimes.com/2010/01/06/dining/063mrex.html). Brady and I use butter instead of oil and water instead of broth/coconut juice, and we love this dish.

I would totally try going vegetarian for a while, but there's no way Brady would make it very long. Too bad. :)

Ask dad for some recipes with
Portobello mushrooms. he is an EXPERT! (ask him to explain this if you haven't heard it already)

Afton looks so much like Lucy! The way she sits, etc. And when did Dan become so handy? And why is he not eating meat? Does that include fish? I gave up meat for a month in h.s. and lost 9 lbs. Wish it were still that easy. Meatless dinner ideas= spring rolls (Costco freezer section); pb sandwiches; burritos, nachos, quesadillas (meat optional); stir fry w/ mushrooms instead of chicken; chili w/o beef (actually you can make lots of soups w/o meat, like potato, tomato, minestrone, broccoli cheese, etc); spaghetti, fettuccine, manicotti, macaroni, veggie lasagna etc.; grits, waffles, eggs (is he eating eggs?), lots of other breakfast foods; SALADS. Let me know how it goes.

We went meatless in January and I posted all the vegetarian recipes I used. I'm a fan of the no meat route. I'm also a fan of a good juicy steak. It's all about moderation I suppose. Anyway, here is a link to our January posts (there are a few posts of my kids, but there are a bunch of recipes).

My favorite recipe was Roasted Ratatouille over Polenta. Mmmmm!

And your kids are adorable! It looks like Texas is treating you well.

I don't have meatless meals to share like everyone else. Ryan doesn't consider it a filling meal unless some kind of meat is involved... although I stick a meatless night in here and there. Anyway, your kids are adorable, as usual.
